Coffee Glaze Basic Recipe

This basic Coffee Glaze Recipe can be used for
Éclairs or some other sweet dessert.
Ingredients:
200 – 250 g / 7 – 8.8 oz powdered sugar
2 – 3 tablespoons instant coffee or 2 – 3 tablespoons coffee extract (warm)
1/2 - 1 egg white
Preparation
Mix the sieved powdered sugar with the warm coffee extract and the egg white until mixture is glossy.
Or mix the sieved powdered sugar with the instant coffee powder, add 2 – 3 tablespoons of warm water and
egg white until mixture is glossy. Use immediately.
Used as glaze for
Éclairs.
